From the importer: Val de Mer is Patrick Piuze’s second winery, co-owned with Moutard-Diligent. Val de Mer wines are produced in a separate winery- Val de Mer is in Tonnerre- and is an above-ground cellar, so the wines take the temperature of the season during aging. Lastly, you could say that Val de Mer is a more traditional Chablis winery in the way that the wines are bottled, favoring broader representations of the vineyards. Patrick Piuze- a Montreal native- took the region by storm when he arrived over decade ago. He worked for Leflaive, Jean-Marc Brocard and Jean-Marie Guffens before starting his own label in 2008, and has very quickly come to be counted among the legendary names of the region. Piuze works with purchased fruit, and his great relationships with the growers of Chablis have allowed him access to choice parcels in all of the great sites.
9 months on the lees before it is disgorged and no dosage is added.
Dry and bracingly effervescent with chalky minerality and high toned notes of salted lemon curd.

In accordance with Pennsylvania liquor law, all of our bottle sales, including the wine club, will be pick-up only from our store inside Lawrenceville Market House.
The sale will not be completed until you pick up your wine and present your valid US drivers’ license or passport. We are limited to 4 bottles (3L) per transaction. If you are interested in ordering more than 6 bottles, send us an email to info@nineoclockwines.com
